Turkey Recipes From Melissa Cookston

No one likes a dry turkey, and Melissa Cookston, celebrity chef and judge on Netflix’s new food show “American Barbecue Showdown,” is here to help avoid ruined Thanksgivings.

Cookston offers up three different recipes for all to enjoy while also touching on the differences between brining and injecting.

Brining vs. Injecting

“The first thing people will say is, ‘You should brine your turkey.’ Yes, brining has many adherents, but I’m not usually one of them. I have always preferred injecting to deliver added moisture and flavor for a few reasons. First, brining a turkey requires a good bit of refrigerated space, generally for a couple of days. Space in the fridge is generally in short supply around the holidays. Secondly, brining has its drawbacks in terms of how it affects (for me at least) the skin and texture of the turkey. Maybe I’ve just not been doing it right, but I’ve just never been a huge fan. I have published brined turkey recipes that were quite good, I thought, but overall, I just prefer injecting a turkey.”

Injecting a Turkey

“When you are going to inject, you can do it right before cooking. You can also put in a different flavor profile than you can when you brine. Also, I’ve had some brined turkeys that were just too salty, and you won’t run the risk of that by injecting.

“You’re going to need an injector obviously. If this is a once-a-year thing for you, then grab an injector from the grocery store for a couple of dollars. They will suffice to get through one turkey a year. If you cook and BBQ more often through the year, you’ll want to invest in a better injector. I have a heavy-duty injector that will make short work of turkeys, pork butts, whole hogs, etc.

“When you inject the turkey, try not to go through the skin too often. I usually work around the skin of the breast as much as possible. If I do go through the skin, I will use it multiple times by injecting through that spot multiple times (at different angles.)”

Turkey Injection Recipes

“I’m attaching some recipes below to help you get started. As you see, you’ll only be limited by your imagination when you inject, so if you want to add some different flavors, knock yourself out. The only caution is making sure you don’t have too large of particles in your injection recipe, or you might clog your needle. These recipes also work great with any poultry, so don’t just save them for Thanksgiving!”

Recipe No. 1

Ingredients

-1 cup chicken stock

-1/2 cup maple syrup

-1 tsp kosher salt

-1/2 tsp white pepper

-1 tsp granulated garlic

-1 tsp soy sauce

-1/2 tsp cayenne pepper

-1/2 tsp chipotle chili powder

-1 tsp hot sauce

Instructions

Add all ingredients to a saucepan and bring it to almost a boil while whisking. Allow to cool before use.

Recipe No. 2

Ingredients

-1/2 cup butter

-1 cup chicken stock

-juice from 1/2 lemon

-1 tsp dried sage

-1/2 tsp garlic powder

-1/2 tsp kosher salt

-1/4 tsp white pepper

Instructions

In a saucepan, heat all ingredients until butter is melted and spices are incorporated. All to cool down. Before it thickens too much, inject poultry in thighs, legs, breasts, and along the breastbone. Allow to sit for 1 hour before cooking.

Recipe No. 3

Ingredients

-1/2 cup lemon juice

-1/2 cup liquid crab boil

-1/2 cup butter

-1 cup chicken stock

-1 tsp hot sauce

-1 tsp cayenne pepper

-1/2 cup olive oil

-1 tsp garlic powder

-1 TBS Cajun seasoning

Instructions

Place all ingredients in a saucepan. Heat until butter is melted and spices are incorporated. Remove and allow to cool to room temperature (it should still be liquid.) Then, inject turkey and place in a pan in fridge for 1 hour before cooking. This will allow injection to spread through the meat.

As the first hit song, Bella’s virality and social media influence continues to push her way of confidently creating on the edge. Bella reminds the world once again that she is not afraid to be transparent when it comes to her sexuality womanhood by releasing a song that talks about topics usually seen as taboo by a woman.

“Lonely” finds Bella Thorne expressing her dilemma of being a girl alone who turns to her phone and the people on it to deal with her loneliness. The song brings to light the idea that women and people all over, especially during these times, are turning to their phone to find connection with others.

The idea of being alone is one that is often perceived as bad or as not the ideal situation. Bella reminds her listeners the message that it is okay to feel these emotions. Watch the video here and the teaser here.

Read a Q&A with the singer, Bella Thorne, below.

What is lonely about and what inspired you to create it?

Well, the idea came from my own personal experience. When I am lonely and horny up late at night, I kept looking at my phone going on Instagram scrolling through different apps, really just wanting that attention from someone. I was writing a lot of music at that time as well so I was always in the writing mode you could say. I just kept hearing “I only checked my phone when I’m lonely and horny, only check my phone…” I was just like, man, I keep hearing this and I just had to go into the studio within the next few days to record it, because I just couldn’t get out of my head. Yeah.

It’s been a few years since your last music project, what made you decide to choose “Lonely” as your first release back?

I wanted to choose “Lonely” because I think it’s a great song to really set off the rest of the record. You know, it’s definitely fun, playful, it’s got that pop anthem vibe to it. I just knew it was a strong contender when I wrote it.

What was your creative process behind the song?

After that late night that I was talking about, I went in the studio in the next few days, we sat down, we started strumming to it, and thinking about different chords and what not behind it. And then I just wrote it with my fav writing partners in crime.

Can we expect more music to be coming out soon following this first project?

Yes, I am definitely releasing more songs, but I also have videos. You know, I have an arsenal written up of songs that I do want to put out. Every song feels like it kind of matches to different genre, but each song is also kind of a standalone you could say. I would definitely describe myself as like a genre-less artist, in the sense that I’ll be releasing chapters of my life. Whichever songs fit that chapter is the chapter I’ll be releasing, but all the chapters will be different. I intend to keep them that way because that really is a part of who I am. I don’t think artists are stuck in just one lane because as a person you go through a lot in life and you change and you learn, and you decide you like different stuff. I think, watching an artist grow is so important and definitely in this new release of music, you’re going to see that growth.

What are some topics you will be tackling in your music?

I talk a lot of topics. This is a hard question because I kind of like to talk about a lot of things. It just depends on what’s on my mind. I’m either writing from personal experience or thoughts, or I’m writing as a character with someone else in mind, and I’m completely stepping into another person. This actually makes the acting side and the music side really connect, which I personally like a lot.

What originally inspired you to venture into the music industry?

Well, originally, I was really scared of hearing that I didn’t have a voice. I thought I was tone deaf. I still say that because I’m still not sure if it was me or not. My voice was bad, and Disney really wanted me to sing, but I didn’t want to. They talked me into it and I didn’t like it. It was a bad experience and I basically said I wouldn’t go back to music again. But then I did the movie “Midnight Sun.” It was my first time singing again and that was all because singing was very important to the character. I understood so I was down to do it since it was a big part of the movie. That experience kind of set me in a much better tone with music, the whole process really made me fall in love with music. I also got to experience music through the acting side, which is a side that I was already really connected to. I think that connection helped me bond more to the music.

What is different about this upcoming release from past projects?

I think honestly from my heart what’s different is that this recent music is 100% me. You know, I really feel like I finally found my voice, where I want to be, and who I am at this current moment in time and I’ve really gotten to express that thoroughly through my music.

So, you’re really popular on TikTok, how has it been collaborating with some of the hottest influencers on that?

Yeah, it’s been awesome. I love all the TikTok kids and I love meeting and being immersed in a new community. I think the whole TikTok world is so interesting in general with the algorithms, the way it works. It really is so different from any other app. I personally love seeing people on my newsfeed that I’ve never seen before doing the funniest shit, so it’s made me definitely fall in love with TikTok.

What’s next for you, music wise?

Well, I want to release the songs, you know, one at a time and just kind of put a vibe out.

I love these songs and I love these videos that I’ve been working really, really hard on. I directed and wrote every single video and I feel like it definitely matches the music. So, I’m really happy with how everything’s going there, so hopefully that is translated.

Do you have any virtual performances we can look forward to seeing in the near future?

Well if all goes well, and legally everything is approved, then it looks like we might be doing a New Year’s live streaming event or concert with some of my super dope friends that want to be a part of it and just kind of creating a vibe. This is for people that can’t be with their family or friends and they’re watching from home and they want to listen to some dank ass music.

Early usage was recreational in nature, but political and racial dynamics led to the criminalization of cannabis and eventually its prohibition. America’s unjust war on drugs systematically targeted marijuana use in the Black community, resulting in racially disproportionate numbers of arrests and convictions. “SMOKE” features the voices of high-profile lawmakers, including the potential Vice President of the United States Senator Kamala D. Harris, Senator Cory Booker and Cook County State’s Attorney Kim Foxx, who are fighting to bring restorative justice to those incarcerated and others saddled with felony convictions. SMOKE also spotlights the tragic story of Corvain Cooper, a father, who is serving a life sentence for selling marijuana in the same neighborhood where legal dispensaries now operate in the open.

While the legal cannabis industry is expected to generate $30 billion in sales by 2025, only 4.3 percent of dispensaries are currently Black owned. “SMOKE” spotlights the hypocrisy of the system, highlighting the stories of pioneering African American entrepreneurs across the country, including former NBA player Al Harrington, who are fighting to own a piece of the booming legal cannabis industry currently dominated by White owned conglomerates and entrepreneurs.

“SMOKE” also dives into the controversy and stories of brave African American athletes, including former NFL star Ricky Williams, and WNBA star Cheyenne Parker, who have risked their careers by openly embracing their use of Cannabis.

NYBG Autumnal Celebrations

For New Yorkers and visitors alike, the grandeur of the fall season is just 20 minutes from midtown Manhattan and The New York Botanical Garden. NYBG is the perfect place to experience the splendor of fall with the Great Pumpkin Path, scarecrow decorations, and awe-inspiring Japanese chrysanthemums in breath-taking shapes and styles in and around the Conservatory. Explore the seasonal bounty of the Edible Academy, which is also reopening just in time for fall, and traverse the winding trails of the 50-acre, old-growth Thain Family Forest to view the changing colors and textures of autumn in the weeks ahead.

Hordes of gourds await discovery along the twists and turns of NYBG’s Great Pumpkin Path all month long. In particular, on October 24th, giant pumpkins that are some of the largest in the world arrive and will be on view through the first of November. These humongous pumpkins, some weighing more than 2,000 pounds, have been nurtured from seed by doting growers and brought to the Garden in collaboration with the Great Pumpkin Commonwealth.

Another highlight at NYBG are the displays spotlighting kiku in and around the Conservatory and Visitor Center. Highly skilled NYBG horticulturists spent 11 months growing and caring for these chrysanthemums (kiku in Japanese) that were cultivated from single cuttings, pinched back, and tied to frames. Flower buds develop as nights grow longer, and in fall, the plants burst into bloom in modern and ancient styles such as ogiku (single stem), kengai (cascade), and ozukuri (thousand bloom). For guests who can’t make it to the gardens in person, New York Botanical Gardens offers a virtual look into the changing hues with the NYBG Fall Color Cam.

New York Botanical Gardens offer perfectly festive and COVID-friendly activities and protocols. The new, limited timed-entry ticketing system staggers visitors’ arrivals, promotes social distancing, and mitigates the risk of crowding in high-traffic areas. In addition, advance purchase of timed tickets is required to ensure the safety of guests. On top of these changes, new measures include requiring staff and visitors to wear masks, increasing sanitization of public and staff areas, and daily health screenings for on-site staff.

Ovolo Hotels Go Vegetarian

Ovolo Hotels announced Thursday– which was World Vegetarian Day— that all of its restaurants and bars in Australia and Hong Kong will move to completely vegetarian menus for the next year. This initiative has been termed “The Year of the Veg” and makes the hotel group the first in the world to eliminate meat from its menus.

Ovolo Founder and CEO, Girish Jhunjhnuwala, said, “We want to be conscious about what we are consuming and practice environmental sustainability as best as we can, as this leads to a larger impact on humanity, not just the environment.”

These venues include:

  • Monster Kitchen & Bar at Ovolo Nishi in Canberra, AU- New Executive Chef Paul Wilson will implement his experience in internationally renowned kitchens to create a sophisticated vegetable-forward menu.
  • ZA ZA TA at Ovolo the Valley in Brisbane, AU- Managed by Israeli-born chef Roy Ner, formerly of Nour and Lilah in Sydney
  • Mister Percy at Ovolo 1888 Darling Harbour in Sydney, AU- This location will be transformed into a vegetarian Italian wine bar.
  • Komune at Ovolo Southside in Hong Kong- The location is cutting meat from its menus, and the hotel will soon debut a new restaurant that will be fully vegetarian, as well.

Other locations such as Alibi Bar & Kitchen at Ovolo Woolloomooloo in Australia and New Zealand, and Veda at Ovolo Central in Hong Kong will continue with their vegan and vegetarian menus, respectively. 

In addition to moving fully vegetarian, Ovolo has already taken numerous other steps to implement eco-friendliness in their hotels. The hotel collection has eliminated single-use plastic bathroom amenities and replaced them with re-fillable, tamper-free pump bottles that are HDPE recyclable, eliminated single-use plastic straws, introduced reusable woven bags for slippers, and began using biodegradable materials in all laundry bags and packaging.
